Instructions
  1. Dice up the tomatoes onions, peppers, and garlic put to the side.
Bacon, Onions & Garlic
  1. Put Duck Fat into Dutch Oven and let it get hot. Add bacon and start to brown, don’t let it burn. Before the bacon get’s crispy add Bell Pepper (or Poblano) and Jalapeno. Let it cook for 1-2 minutes then add Onions.
  2. Add 2 tbsp Maple Syrup to caramelize the onion and give it an extra sweetness. Once the onions have caramelized, add Garlic.
The Meat Part
  1. Add Beef, and listen to it sizzle! Now let’s add the goodies!
Add Seasonings
  1. Kosher Salt, 2 tbsp, Cinnamon – 1 tsp, Turmeric – 1 tsp, Cumin – 1 tsp, Cayenne – 1 tsp, Black Pepper – 1 tsp, Chile Powder – 1 tbsp, Paprika – 1 tbsp Simmer till brown and smelly!
  2. Now add the Bay Leaf(s), tomatoes and Chile de Árbol *this gives the chili a distinct flavor. If you’ve never had these peppers before then maybe add it for 5 minutes towards the end.
  3. Add the beer, and some water (or stock) until it covers the meat. Sit back and enjoy the smell while drinking some Cheer, or in my case Shiner Okoberfest. That beer is good too. Let’s leave that for another time tho-ugh.
